Ingredients4 boneless, skinless chicken breast halves, cut into 1-inch cubes1 medium Florida eggplant, peeled and chopped2 medium Florida tomatoes, chopped2 small Florida zucchini, sliced1 medium Florida green bell pepper, cut into 1-inch chunks1 large Florida onion, chopped3 cloves garlic, minced or 3/4 teaspoon garlic powder1 26-ounce jar spaghetti sauce2 teaspoons Italian seasoningsalt and pepper to tastePreparation
- Combine all ingredients in a 3 1/2 or 4-quart crock-pot. Mix well.
- Cover and cook on the low setting for 6-8 hours.
