Snap Beans and Tomatoes

Ingredients1 1/4 pounds fresh Florida snap beans, trimmed1 teaspoon olive oil1 small Florida onion, diced1 clove garlic, minced or ¼ teaspoon garlic powder1/2 cup Florida cherry tomatoes, cut in halfsalt and pepper to tastePreparation

  1. Blanch green beans.
  2. Place olive oil in a large frying pan over medium heat.
  3. Add onion and garlic; sauté until translucent.
  4. Add blanched snap beans; sauté for 3 minutes while stirring.
  5. Add tomatoes and sauté for 1 minute. Season lightly with salt and black pepper. Serve warm.

For BabyBefore sautéing squash for recipe take ½ cup squash for baby and steam until tender. Place in food grinder and puree. Freeze any extra portion in ice cube tray for use later.Yield4 Servings
