Chopped Salad

Ingredients4 cups Florida lettuce hearts, chopped1 15-ounce can red beans, drained1 cup Florida celery, chopped1 cup Florida red bell pepper, chopped1 cup Florida yellow squash, chopped3/4 cup Florida peanuts or pecans, chopped1/2 cup cooked corn kernels1/2 cup Florida cilantro, chopped1/3 cup balsamic vinegar1/4 cup olive oil2 tablespoons grated Parmesan cheesePreparation

  1. Combine first 8 ingredients in a large bowl; mix well.
  2. Whisk together vinegar and oil and pour over salad; mix well. Top with cheese and serve.
