Gulf Garden Shrimp Salad

Ingredients1 1/2 pounds cooked medium Florida shrimp, peeled and deveined2 cups drained red beans1 cup Florida celery, chopped1 cup Florida zucchini, chopped1/2 cup Florida green beans, diced1/2 cup green onions, sliced1/2 cup ripe olives, sliced1/2 cup white vinegar1/3 cup olive oil2 tablespoons lime juice2 tablespoons grated Parmesan cheese1 cup Florida basil, choppedPreparation

  1. Combine all ingredients except cheese and basil. Chill for at least one hour.
  2. Add cheese and chopped basil. Serve with fresh, sliced tomatoes.
