Red Bean Salad


1 15 ounce can kidney beans
1 cup chopped Florida celery
1 small Florida zucchini, chopped
1 small Florida cucumber, chopped
2 green onions, chopped
1 cup low-fat mozzarella cheese, cubed
1/2 cup grated Florida carrots
1/3 cup chopped fresh parsley
2 tablespoons lemon juice
2 tablespoon olive oil
Salt to taste


  1. Rinse beans under cold water and drain well.
  2. In a large salad bowl, combine all ingredients. Toss well and serve
